"Passatelli” in broth
Ingredients for 4 people
- 250 g of breadcrumbs
- 80 g of grated Parmesan cheese
- 3 eggs
- grated lemon peel
- nutmeg
- salt and pepper
- 2 litres of good broth
Make a mound with the breadcrumbs and break an egg into the centre of it. Add the grated Parmesan cheese, a little grated nutmeg, the lemon peel and a small ladleful of broth. Knead the mixture together well until it is firm and compact. Cut the dough into large chunks and pass it through a special utensil. Little “tails” of dough will be pushed out of this utensil, slowly break and fall away.
Bring the broth to the boil and add the passatelli. When these return to the surface (after 2/3 minutes) they are ready to serve.
