Squacquerone

It is one of the DOP (Protected Designation of Origin) products of our Region, it is a cheese and it is called Squacquerone, a Made in Italy gastronomic excellence.

Squacquerone is a specialty of this land where for centuries it has represented the generous alternative to herbs alone to be paired with the piada. It is soft, buttery and shapeless. It reminds one of the stracchino (a kind of cheese), but it is tastier. Farmers made it in winter, their women took it to the market by placing it on cabbage leaves.

Its history dates back to the Middle Ages, and today we spread it on the piadina along with rugula, but it can be used in risottos, in savory pies, in rolls, but also used in the preparation of desserts.

 

It is produced exclusively in the territories among the provinces of Ravenna, Forlì - Cesena, Rimini, Bologna and Ferrara, between State road 64 “Porrettana” and the Po.

It is produced with whole cow's milk, coming from the typical geographical area, lactic ferments added with natural whey starters, rennet and salt.

Its name derives from the Romagna dialect "squaquaròn" which indicates its high degree of "wateriness". It has no crust or peel and its texture is very creamy.

The Protected Designation of Origin (PDO) Squacquerone di Romagna PDO was recognized by Implementing Regulation (EU) No. 679/2012 of July 24, 2012, under the conditions and requirements established by Regulation (EC) 510/2006.
