Roast potatoes

Ingredients for 4 people

  • 5 large potatoes
  • Rosemary
  • 3 cloves of garlic
  • ½ glass of extra-virgin olive oil
  • Salt and pepper to taste

 

The recipe we recommend reduces cooking time as, before roasting, the potatoes are partly cooked in boiling water. Peel the potatoes and cut them into large chunks. Put them in a pan of water and boil for 15 minutes. Drain and place them in an oven-proof dish with the olive oil and chopped rosemary and garlic. Season with the salt and pepper to taste and place in the oven. Turn them over a couple of times with a wooden spoon as they cook. Leave them in the oven for about an hour to cook and a further 15/20 minutes if you want them to be golden brown.
