Strozzapreti

Ingredients for 4 servings

 

  • 500 gr. of plan flour
  • 1 egg white
  • salt
  • lukewarm water

 

Mix the ingredients thoroughly by hand to a consistent pasta. Roll out the pasta into a fairly thick (for pasta) sheet. Roll and cut into 2 cm wide wheels. Unroll and rub by hand. The pasta breaks into maccheroni sized chunks: these are strozzapreti (priest chokers). This is very fast when you get the hang of it and you’ll soon have enough to eat.
cook in plenty of salted water and, like the tagliatelle, dress as you please.
