Piada or piadina

Ingredients for 8 people

  • 500 g. wheat flour
  • 30 g. pork lard
  • Warm water or milk
  • A pinch of baking soda
  • Salt



Put the flour on a chopping board and make a small well in the centre. Put the salt and lard in the well and add enough warm water to knead into a soft and light dough. When ready, cover the dough with a tea towel and allow to rest for 30 minutes. Divide into 10 small balls and then using a rolling pin, roll until thin and round. Cook on a special piadina griddle or a non-stick frying pan.
Serve with cold cuts, cheeses and a selection of vegetables or, for a really greedy alternative, with “Nutella” chocolate hazelnut spread!
Serving suggestion: if you do fill the piadina with cheese then put it back on the griddle or frying pan to allow the cheese to melt. Enjoy!
