Spaghetti with fresh anchovies

Ingredients for 6 people

  • 1/2 kg. spaghetti
  • 1/2 kg fresh anchovies
  • 1 glass dry white wine
  • 2 or 3 garlic cloves
  • 1 sprig of parsley
  • A little piece of chili pepper
  • 2 or 3 tomatoes cut in pieces
  • Olive oil, salt, pepper, a little fine bread crumb

 

Dry the fish removing heads and bones, wash and cut them in little pieces. Make a mixture of chopped parsley and onion and fry it lightly in a little olive oil.

After some minutes, add the fish pieces and turn them a little in this frying mixture. Then add the tomato pieces and a tablespoon of olive oil, the chili pepper, salt and wine.

Cook again on a low heat for an hour in an uncovered pot. If the sauce is too dense, add some water.

Cook the spaghetti in a big pot of salted water. At the end dress the spaghetti with the sauce adding a little bread crumb. Mix very well and serve hot.
